Ingredients
- 1 aubergine
- vegan mince
- 1 1/2 tbsp red miso
- 1 tsp ginger paste
- 1/2 tbsp soy sauce
Method
- soak blocked aubergine in water to remove bitterness
- cook aubergine in a pan until the skin is nicely fried, add vegan miso and cook until heated
- add water until aubergine soaked in, and add miso, ginger paste, and soy sauce
- cook until aubergine become softer
