Ingredients
  • 1 aubergine
  • vegan mince
  • 1 1/2 tbsp red miso
  • 1 tsp ginger paste
  • 1/2 tbsp soy sauce
Method
  1. soak blocked aubergine in water to remove bitterness
  2. cook aubergine in a pan until the skin is nicely fried, add vegan miso and cook until heated
  3. add water until aubergine soaked in, and add miso, ginger paste, and soy sauce
  4. cook until aubergine become softer
